Since 2006, Productores Orgánicos de la Zona Alta de Ixtlan has prioritized meticulous practices, producing fully washed Yellow Caturra. Beans are manually harvested, pulped the same day, and fermented for 12–24 hours before drying on patios or blankets. The cooperative emphasizes sustainability, banning herbicides, conserving water, and earning organic certification, alongside social initiatives like fair wages and workforce training.
