Bilbao sits deep in the mountains of South Tolima—rich soil, abundant water, and heavy vegetation create ideal conditions for expressive washed coffees. Los Vascos began in 2015 with a small warehouse in town, named in honour of the Basque spirit of resilience and innovation. More than 100 producers deliver cherry here, many running family farms on 4–5 hectares at 1,500–1,850 MASL. Recent years have seen a shift toward environmental conservation, better infrastructure, and improved processing. Expect a clean, structured cup with citrus brightness, red apple sweetness and a caramel finish.
