Each season, Pablo Chuy Flores and his team spread freshly washed parchment across open patios, turning it by hand through the day to meet the sun from every angle. Over time, the moisture fades, the sweetness concentrates, and balance begins to show.  The result is grounded, deliberate, and certain of where it comes from.
